Remember that little something we've been hinting at?

Well, we're rather excited to finally share it with you.

Introducing the Auld Farm Distillery New Make Three Pack.

Three different grains. Three different spirits. One Southland farm.

And not a whisky barrel in sight.

Whisky before it becomes whisky

If you've been following our journey, you'll know that we're doing things a little differently here at Auld Farm.

We grow our own grain, harvest it, have it malted, then bring it home to distil using water from our farm.

But whisky takes time.

Years, in fact.

And while our spirits are quietly maturing in oak barrels, we wanted to share something that doesn't require quite so much patience.

New make spirit.

It's the clear spirit that comes off our stills before it spends any time in oak.

No barrel colour. No oak influence. Just the character created by the grain, fermentation and distillation.

It's a chance to taste the foundations of our future whiskies.

OAT | BARLEY | WHEAT

All three grains are grown here on Auld Farm, but each brings something different to the distillery.

Oat New Make

Oats aren't a grain most people associate with whisky, which is one of the reasons we love exploring them. We're particularly interested in the soft, creamy character they can bring to a spirit.

Barley New Make

The traditional whisky grain. Barley is the foundation of single malt whisky and gives us a wonderful starting point for exploring how our own Southland-grown grain behaves through the stills.

Wheat New Make

Wheat offers another direction entirely, with the potential for a softer, more delicate spirit.

Tasting the three side by side is where things get really interesting.

Same farm. Different grains. Different personalities.

What about the other 75%?

There's a lot of conversation in whisky making about just how much of the finished whisky's character is created before the spirit enters the barrel.

We often talk about roughly 75% coming from the new make spirit itself.

It's a useful way of explaining why what happens before maturation matters so much, although there's no universal percentage that applies to every whisky.

The grain, the fermentation and the decisions we make during distillation all contribute to the spirit that goes into the cask.

Oak then has years to add its own character.

Which means that by tasting our new make spirits today, you're getting a glimpse of the whisky we're working towards.

It's rather like getting to read the first chapter of a book before the rest has been written.
