At Auld Distillery the quality of our Foundation Cask Whisky starts with the quality of our barley. 

The land at Auld Farm has been growing grain since 1883. It’s what this farm does best. With high rainfall, fertile soils and a reliable climate, Scotts Gap is perfect barley growing country.

At Auld Farm, we’re passionate about applying best practice when tending our crops. We believe that our land needs to be nurtured and preserved to ensure that it keeps producing superb harvests — like it has done for more than 130 years.

 
 
 

 Our Foundation Harvest Casks are crafted from barley grown on Auld Farm’s Paddock #27, known as ‘Mailbox Paddock’, and harvested in 2021.

Homegrown barley is the defining ingredient of our Auld Farm Distillery single malt.

From trialling unique grains and specialist cultivars, to concocting brews in the Auld Lab — our on-farm test distillery — right through to sourcing our handcrafted, bespoke copper stills, we are hands-on every step of the way.

As one of only a handful of distilleries in the world to grow our own grain, Auld Distillery is about true seed-to-sip traceability. Not only is the grain grown on Auld Farm, but the water used to make our premium whisky is sourced from a pristine natural spring emerging from a seam of rock, right here on our land.

 

Only 100 Foundation Harvest Casks of this first ever single-paddock, single malt, single-cask whisky will be produced. They will be available to purchase at an introductory special price for a very limited time.

 
 

Casks can be tailored to your preferences — whether you’re after a whisky with a touch of vanilla and caramel, or spicy red fruits — as either a 100L AQC or 200L ASB barrel.

Your Harvest Cask will then be matured at Auld Distillery’s on-farm bond store for either five or ten years.

We invite you to become part of the journey by visiting Auld Distillery for the filling of your Harvest Cask. While you’re here, tour Auld Farm to experience the origins of your whisky.

During the maturation process, you’ll be updated with samples of your single malt spirit — one at half maturation and one six months prior to bottling.

 

OAK FINISH TASTING NOTES

Ex-bourbon cask

Coconut, vanilla, honey, caramel, oak, leather, nutmeg, almond, butterscotch.

Ex-port cask

Plum, blackberry, sultanas, redcurrant, dried apple, oak, cranberry, dark chocolate.

Ex-sherry cask

Fig, dates, raisins, nutty, cherry, cinnamon, clove, marzipan, ginger, fruit cake.

Ex-pinot noir cask (225l only)

Raspberry, strawberry, red currants, oak, lightly spiced, earthy notes.
This cask originates from an award winning Central Otago Pinot Noir vineyard.


 
 

*First Fill denotes this is the first time these casks have been used to mature whisky and therefore they will have a much greater influence on the spirit in terms of both flavour and colour.

You can buy now in full or drop a non-refundable 20% deposit (the balance is due prior to the filling day of the cask) to secure your place as one in one hundred.

All Foundation Harvest Cask purchasers will also receive a sample of their new make spirit, Norlan whisky glasses and a certificate of authentication.
